Made a rack of st. louis style ribs yesterday, and boy they turned out great. used charcoal (char-broil kettlemaster w/ Tru-IR), "fuse" method, about 4 hrs at 250deg (I think they coulda used another 30 mins while they were wrapped), and boy o boy they turned out great. Made a dry rub recipe from a quick internet search & it was perfect. The thicker, shorter end was still too pink in the middle so I sliced & grilled them direct while I ate the rest with my wife. For never making ribs before, they turned out fantastic, which I'm really happy about!
 
Ribs, brisket, pork butt of course.

But we did a smoked chashu the other day. Wow!

I love eating this more than the BBQ process... because waiting to eat it while it cooks just kills me. LOL

I make mine with a spicy Korean BBQ sauce/marinade. I chunk up the belly into about 2" squares and then marinate it in the Korean BBQ sauce all day. Then I put the chunks onto wooden skewers and cook em on an indirect heat on my egg. I like em a little crispy on the outside so I leave a small gap between each chunk when I skewer them.

It's so good.
