38th anniversary tonight. Going to my favorite restaurant for my favorite thing to eat. Chicken Milanese over fettuccine and marinara sauce. And a nice Pilsner which I hear pairs well with it.

If you like grilled bratwurst, and never prepared them this way before… I always get rave reviews for my brats, even though it’s as simple as can be.

Scale this to however many brats you are making.

Brat Tub
1 Aluminum Roasting Pan
10 brats
1-2 yellow onions
2 red/amber beers
1/3 stick butter

Cut your onion into large petals. Place them in the aluminum pan with 1/3-1/2 stick of butter. Place on the grill and sauté the onions to 90% cooked.

Add in 2 beers. Stir and and simmer.

While the beer and onions are getting hot, grill your brats.

I usually grill my brats 4-5 min and rotate them 4x. They will be fully cooked 16-20 minutes.

By now, your beer/onions are simmering. Add in the brats. Make sure they are mostly submerged in the liquid. Add more beer if needed.

Let that simmer 15-30 minutes. You can simmer longer as other dishes are being cooked. That’s what is great about this, the brats are on standby for when you are ready to eat.

Serve with the onions, on a bun or on your plate without bun.
