These beauties were a dessert kind of thing that are made with pumpkin seeds. They are like a cross between a cookie and a piece of cake... at least that's how I would describe it. I would have never known pumpkin seeds were in it unless they told me.

The damn things looked way too pretty to eat. My daughter-in-law's grandparents served them to us over at their house in Mexico. To get these... you have to go to the local convent and ask the nuns to make them for you days in advance. They let you know when to come pick them up. Each one was like a work of art.

Wow, those look beautiful. Honestly, I couldn't tell there were pumpkin seeds in them, but they look almost too good to eat, and this proves that food is an artform.

And yes, roasted pumpkin seeds are a staple at my folks' house for Halloween. Which is coming sooner than later.
 
Took a few pics of the Grilled FRIED Chicken.

It's not fried... but it damn sure tasted like it was.

I seasoned the chicken (bone in & fat still on) 24 hours prior with the Hot Dirty Bird. I was going to cook it about 2 hours after seasoning, but the Rams tried to stab needles in my eyes against Atlanta.

I put some gloves on and coated the chicken (thighs and a couple breasts) with the Duck Fat. That acted as an excellent binder for the Pork Panko.

Then I coated the chicken well with the Pork Panko.

Put it on the egg and cooked them indirectly without turning for about an hour.

This was so good just like you see it, but if you wanted to move this into the forbidden realm... add a little drizzle of this on it before you rip into it.

Gonna have to try that pork panko. Hey. So what temp did you have your egg?
 
Pork panko, fucking BRILLIANT!!!
I eat a mostly low carb, keto type diet and get my fried food crave on using almond flour, but that panko looks amazing.
Wonder if just pulse grinding up the rinds in a blender would provide same?

EPIC makes some great products, I trained for a marathon one time on a keto diet and ate the Epic bars in place of the sugary energy gels commonly used

Not sure about the blender.... that might turn it into mush. Those rinds in a bag can be greasy too. I thought about it, but I bet you'd have to buy a bunch of bags to get enough once they're grinded.
