Generally a 5 or 6 is my goal when grilling... kinda depends on the cut of meat though.
 
Where’s #s 1 and 2? I generally sous vide my steaks to 126, and then give them a good sear on very hot iron. Ends up being about 128.
 
I'm probably around 6. Cooked enough to make it tender but not too much. And enough pink to give it flavor.
 
I vacuum seal mine and use the water bath to get it about 124° for an hour and a half or so, depending on size. Then a bad ass sear for some color and crust. Delicious. Somewhere between 4 and 5 for me.
