What's everyone cooking up to beat da raiders. . . ?

My wife is having friends over tonight. I made a cheesecake and will be making a big dish of manicotti for their meal tonight.

I am betting there will be leftovers and that is what I will be having. Don't really have plans aside from that. . .

Maybe one of you will have an idea that rocks my socks!
 
Just a simple BBQ. My son is a Raider fan. He wants to do the BBQing. Just burgers and hot dogs. His family will be here too. I'll make my famous salsa for a snack. He's a Raider fan but he does like the Rams as his second favorite team. The way I like the Raiders as my second favorite team. So whoever wins probably won't be doing much trash talking.
 
I'm in the middle of making 4 different salsas.

One is a hot green salsa using a bunch of green habeneros and roasted tomatillos. Sneaky bastard. It starts out like a medium green salsa but heats your ass up pretty quickly after that initial taste.

The second one is a medium hot salsa Verde. It just has a few roasted jalapenos for heat. It's a good chips and salsa type salsa. It would be good on tacos as well.

The other two will be red salsas with roasted tomatoes, onions and garlic. One will be medium hot, the other will be double burn hot with a shitload of orange and red habeneros and a couple ghost peppers.

So I guess I'm going to have to make tacos for the game time menu. Probably do shrimp tacos.

Had a fire in the oven that ended up using the fire extinguisher on. . . ruined a whole lot of manicotti that was in the middle of being stuffed - by me.

So sad about it.
That's awful. Hopefully no one was injured! Does that mean take out for your get together? :eyeroll:

Some fantastic weather here in the Northeast 70 degrees so I will be grilling some ribeye steaks today with garlic asparagus of course.

I didn't really track my recipes on these. It froze the other night so I had to pick all my habeneros, tomatoes, and tomatillos. About 40 of the habs were green (not ripe) so I decided to make a hot green salsa with them rather than letting them go to waste. Green habs are still pretty hot. So I roasted a bunch of tomatillos under the broiler, put them in my robot coupe with sweet onions, cilantro, kosher salt, and agave syrup and blended it all together. I took a few tastes to make sure the flavor profile was right, then canned it in 8oz jars.

The double burn salsa is primarily the same thing except that I put red and orange habeneros along with my only two ghost peppers that grew :angry:, added some cooked carrots (for smoothness), and roasted tomatoes and onions instead of tomatillos and raw onions.

The ripe habs were pretty damn hot. Still not the hottest salsa I've made but it will make you sweat for sure.
 
Going rather light today. Got some corn tortillas, slaw, avocado, limes and cod for fish tacos. And from my much younger days, a Narragansett Lager. :giggle:
